Chocolate & Berry Ramekin Pie 🤤 Episode 4 of “Perfect Pies” is a delicious dessert that I didn’t know what to call 🤣 Serves 1: ▪️leftover cuttings of puff pastry or 1/4 puff pastry sheet (I used gluten-free) ▪️Mixed frozen berries ▪️1 heaped tbsp chocolate sauce (I used a dairy-free one) ▪️squeeze lemon juice 1️⃣Roll out the spare pastry until it’s flat and large enough to top a ramekin. 2️⃣Add the berries + chocolate sauce + lemon juice into a ramekin and mix together. 3️⃣Top with the pastry and fold in the edges to seal. 4️⃣Air fry for 8 minutes at 200C or oven bake for 15-18 minutes at 200C until the pastry has turned golden.

Mushroom Stroganoff Pie 🍄 episode 3 of “Perfect Pies” is this show stopper that you NEED to try! Serves 4 ▪️500g mushrooms (I used chestnut) ▪️1 red onion, diced ▪️1 tsp dijon mustard ▪️2 garlic cloves, crushed ▪️handful fresh parsley ▪️250ml cream (I used soya to be dairy free) ▪️1/2 juice lemon ▪️1 puff pastry sheet (I used gluten-free) 1️⃣Firstly, roughly chop the mushrooms and finely dice the onion. 2️⃣Heat a large non stick pan with olive oil and add in the onion and fry until it softens (3 minutes) 3️⃣Now add in the mushrooms and fry until they soften (5 minutes) 4️⃣Add in the mustard, crushed garlic, parsley, cream, lemon juice, generous pinch of salt and pepper and stir. Simmer for 10 minutes until the sauce thickens 5️⃣Pour the mushroom sauce into a baking dish and top with the puff pastry (crimp in the edges) glaze with olive oil and bake at 200C for 20-25 minutes until golden and crispy

Creamy Salmon Pie 🤤 episode 2 of “Perfect Pies” is this delicious pie that’s super comforting and easy to make! Serves 4: ▪️500g salmon ▪️1 carrot, grated ▪️1 stalk celery, finely chopped ▪️1 cup peas (100g) ▪️100g grated cheese (I used vegan) ▪️handful fresh parsley, chopped ▪️1 tsp dried dill ▪️1/4 tsp garlic granules ▪️½ juice lemon ▪️250ml cream (I used soya) ▪️1kg white potatoes, peeled ▪️knob of butter (I used vegan) ▪️75ml milk (I used almond) ▪️salt & pepper 1️⃣ Peel and chop the potatoes and boil for 10 minutes until soft. Drain, add the butter + milk + pinch salt & pepper and mash until smooth. 2️⃣ Meanwhile, skin the salmon and chop into small ish chunks and add to a large baking dish. 3️⃣ Finely dice the celery, grate the carrot and cheese and chop the parsley and add them all to the baking dish along with the dried dill, garlic granules, lemon juice, cream, salt and pepper and mix together. 4️⃣ Finally, top with the mash and bake at 200C for 40 minutes.

Mushroom & Walnut Cottage Pie 🤤 this meat-free version will surprise you! This is episode 1 of “Perfect Pies” 🥳. I tweaked my viral bolognese recipe to make it pie friendly too! Makes 4 portions: ▪️200g mushrooms, quartered ▪️100g walnuts ▪️1 red onion, quartered ▪️1 carrot, chopped ▪️2 garlic cloves ▪️1 tsp Italian seasoning ▪️1 tsp dried basil ▪️1 tsp dried oregano ▪️1 can chopped tomatoes ▪️1 cup frozen peas (100g) ▪️1 tbsp yeast extract (or marmite if you’re not gluten-free) ▪️1kg white potatoes, peeled ▪️knob of butter (I used vegan) ▪️75ml milk (I used almond) ▪️salt & pepper 1️⃣ Firstly, add the mushrooms + walnuts + onion + carrot + garlic to a food processor and pulse (don’t over blend) as you want texture. 2️⃣ Heat a pan with oil and add in the mince along with the dried herbs and fry for a few minutes. 3️⃣ Now add the chopped tomatoes + peas + yeast extract/marmite + pinch salt + pepper and simmer with the lid on for 10-15 minutes. 4️⃣ Meanwhile, peel and chop your potatoes and boil for 10 minutes until soft. Drain, add the butter + milk + pinch salt & pepper and mash until smooth. 5️⃣ Finally, transfer the mince into a large baking dish, top with the mash and press it down. Drizzle over a little oil and bake at 200C for 30 minutes.
