Occhi di bue literally translates to “ox eyes” and they’re a characteristic Italian sandwich cookie, filled with anything you like. They’re super easy to make and I guarantee you’ll love them! Ingredients below 👇 225g (1 + 3/4 cup) flour 125g (1 cup) icing/powdered sugar 125g (1 stick) softened butter Pinch of salt 2 egg yolks 1 tsp vanilla extract Pistachio spread (or other filling of your choice) Method: 1. Mix the flour, sugar and salt together, then add the egg yolks, vanilla and butter. Mix until a dough forms, then refrigerate for 30min. 2. Roll out the dough on a flowered surface until about 4mm thick, then use a cookie cutter or cup/glass to cut out circular cookies. Use a smaller cookie cutter (or a piping tip, like I did in the video) to cut out smaller circles in the middle of half the cookies. 3. Bake at 170C (340F) for 15min, or until lightly golden. Sprinkle icing sugar only on the cookies with the smaller circle in the middle. 4.
