Ingredients (for 2 servings): -extra virgin olive oil -1/2 red onion, sliced -1 red bell pepper, sliced -kosher salt -freshly cracked black pepper -16 ounces steak of choice -1 ear corn, kernels removed -crushed red pepper flakes, to taste -2 cups cooked brown rice -1 can pinto beans, cooked -1 cup cherry tomatoes, halved -queso fresco, crumbled -fresh cilantro, finely chopped -2 WHOLLY®AVOCADO smashed minis -juice of 1 lime Directions: -Heat some olive oil in a cast iron pan over medium-high. Add in the onion and bell pepper to sauté, and season with salt and pepper. Cook, stirring occasionally, for about 15 minutes, until veggies are deeply caramelized and softened. -Meanwhile, allow the steak to come to room temperature. Pat day and season generously with salt and pepper. Heat a little olive oil in a pan over medium-high, then add in the steak to sear. Cook for about 4 minutes per side, or until cooked to your liking. Set the steak aside, off the heat, to rest for at least 10 minutes. Once rested, cut into thin slices. -Heat a bit more olive oil in a small pan over medium-high, then add in the corn kernels. Season with salt, pepper, and red pepper flakes, then cook, stirring occasionally, for about 10 minutes, until corn is lightly charred. -Assemble the bowls! In each bowl, lay down some brown rice and pinto beans. Add on the steak slices, charred corn, tomatoes, queso fresco, and cilantro. Top each bowl with a WHOLLY®AVOCADO smashed mini and a squeeze of lime. Recipe for ~12 shots: - 70g Ginger - 2 Oranges - 1 Lemon, juiced - 1 cup Water - 3/4 tsp Turmeric - Dash of Black Pepper 1. Chop up Ginger 2. Peel oranges 3. Add ginger and oranges with lemon juice and water to blender 4. Blend until smooth 5. Strain through cheesecloth 6. Squeeze out all the liquid 7. Pour into 2 oz jars 8. ratatouille❤️ Rlly simple recipe Simmer the sauce ingredients in a pan until thickened (use corners of cut veggies, onion, butter, olive oil, and tomato sauce) Spread the sauce into a baking dish. Thinly slice vegetables and stack them. Arrange the stacked vegetables on their side over the sauce. Brush with olive oil. Cover and bake 30 minutes in 375. Frozen Beefy Cheesy Burritos This recipe makes 6 burritos that you can store frozen, and reheat in less than 3 minutes. Way better for you and tastes way better than Taco Bell 👌 Since this recipe is also so simple (it took me less than 20 minutes from start to finish, minimal ingredients/cooking) - you can easily double or triple the recipe to yield multiple weeks worth of burritos! Per burrito (makes 6) 365 Cals 28g Protein 35g Carbs 13g Fat Ingredients: 16oz 93% beef 1 packet taco seasoning 200g 2% Greek yogurt 100g red enchilada sauce 60g 2% cheddar 2 laughing cow cheese wedges or 60g light cream cheese 2 tablespoons chopped cilantro (optional) 6 burrito sized tortillas To reheat - you can simply microwave these for 2-3 minutes (one at a time) and they’ll be good to go!
