Scallion Oil Noodles Ingredients * 8-10 scallions * 2 shallots(optional) * 1/2 cup neutral oil * 2 tbsp light soy sauce * 3 tbsp dark soy sauce * 1 tbsp oyster sauce * 4 tsp sugar * 1 lbs fresh wheat noodles * Egg(optional) Instructions 1. Cut scallions into 2 to 3 inch segments separating the white and the green. Thinly julienne each and set aside. Thinly slice shallots as well. 2. Add shallots and white portion of scallions in a wok with oil. Cook on medium heat for 8-10 minutes before adding the scallion greens. 3. Cook for an additional 5-7 minutes until golden brown then strain out the oil. 4. To a wok, add 3tbsp of the scallion oil, light soy sauce, dark soy sauce, oyster sauce, and sugar. Let simmer on low for 2 minutes. 5. Boil fresh wheat noodles according to instructions and combine the noodles with the sauce. 6.
