Day 64, 65 & 66 of culinary school!! 👩🏽‍🍳 - i’ve been so excited to finally show you the vlog of our chef commis exercises! even though I couldn’t actually film the cooking as we were on a tight time constraint, i definitely wanted to show what we ended up doing! so basically, you did the exercise 2 times. Once as a head chef and then the second as a commis or sous chef. we were being graded on creativity of recipes, ability to lead another chef, organization, the balance of the plate and things like that. it was pretty nerve wracking going in there as you had no idea what to expect and I personally had never directed anyone in a kitchen before. But it was actually SO much fun, i loved it. I was in the group with pork tenderloin so I made roasted pork tenderloin with brown butter sage potato purée, caramelized onions and apples, crispy chili kale and fried sage. It turned out really good and i was really proud of the finished product! I’ve learnt so much in school so far and felt today was really an application of those skills. Day 63 of culinary school! 👩🏽‍🍳 - it’s been a little while since I posted one of these blogs but I just realized my Easter holiday is almost finished and I still haven’t finished posting all of last terms Vlogs! So, here is day 63 where we made a Paris-Brest and it was actually so fun! If you go back to my last vlog a few post down, you’ll see all of the preparation we did for this since it is a pretty advanced form of patisserie. it’s basically choux pastry in a big ring and then inside it’s filled with hazelnut creme mousseline, hazelnut praline and icing sugar. It was pretty fulfilling seeing our progress from making profit to now making something like a Paris-brest! Replying to @Bebe Mango & Strawberry Trifle 🥠🍓 - this is a very fast paced video so detailed instructions are below! this recipe is loosely based on my aunts recipe! she made the best trifle! hope you enjoy ❤️ - jello flavor of choice - i used strawberry- follow package instructions. i used one bc i don’t love jello but you can use 2 sponge cake 225g softened butter 225 g caster sugar 4 eggs, room temp 1 tsp vanilla 225g self raising flour 1-2 tbsp water/milk recipe from @leithscooking beat softened butter & sugar until light and fluffy. around 7-8 min. should turn white and light. whisk eggs and vanilla. beat in a tbsp at a time for 5-6 seconds until just beaten in. repeat 1 tbsp at a time until eggs are finished. don’t rush as batter can split. sift in dry ingredients and fold until combined. it should have a dropping consistency. if too thick add 1/2 tbsp of milk or water until desired consistency. put in 9x13 sheet pan and bake at 350 F or 180 C for around 20-25 min think golden brown and springs back when touched. custard 2 cups heavy cream 2 cups whole milk 8 egg yolks 1/2 cup sugar 4 tbsp cornstarch 1 1/2 tsp vanilla extract recipe adapted from amanda’s cooking scald milk and cream together. until just before boiling. set aside. mix yolks, sugar, and cornstarch. slowly pour in cream/milk to egg yolks and whisk continuously. little by little so it doesn’t cook. once it’s all added. add back to a clean pot and bring to a boil. it will get lumpy but keep beating and it should become nice and creamy. if it splits or gets greasy, put the pan over a bowl of cold water and whisk. it should go back to normal. whipped cream 600 ml heavy cream 1-2 tbsp icing sugar 1 tsp vanilla extract whip this until soft peaks. you don’t want to get it too stiff as you want it to be slightly loose. cut 8 mangos and a packet of strawberries however you like. cut cake into 22-24 slices. i like them bigger so it doesn’t fall apart. layer custard, then cake, then soak in pineapple juice, around a tbsp per cake piece. then add strawberries, mangos, jellos and whipped cream. layer again with custard, cake, fruit etc. cover and refrigerate overnight. best eaten the day after! #lailaspantry #trifle #mangotrifle #britishtrifle #pakistanitrifle #strawberrytrifle #triflerecipe #bakingrecipe #dessert #dessertrecipe #pakistanidinner #friendsdinner #dinnerparty

Replying to @noor.khan.nk Final part of my Pakistani dinner! 🇵🇰 - thank you guys all so much watching along and enjoying the vlogs as much as i loved making them! this was such a fun series for me as i’d been wanting to show the food I grew up eating to my friends for the longest time! i always love making these vlogs as you guys really enjoy the process of me prepping and cooking for dinner parties and i find the more I do them the faster I get! i’ve been getting a fair amount of hate on TikTok on my pages and messages about not fasting/the clothes I wear and i just want to point out that i’ve been very transparent for a long time about not being religious. it’s never something that i’ve claimed to be because i’m not! but i’m very attached to my Pakistani heritage and the food I grew up eating. My mom and nani cooking Pakistani food is the thing that gave me love for cooking and inspired me to be a chef in the first place. I love introducing my friends to Pakistani food and seeing them love it as much as I do!
