Here’s #WhatMyKidsEatinaDay Breakfast: sausage puff pastries Preheat oven to 400F Cut thawed pastry sheet into 12 squares. Place a fully cooked or thawed sausage diagonally on each square. Pull opposite corners on the puff pastry over the sausage and pinch to seal. Repeat with the remaining puff pastry squares. Into a bowl whisk together an egg and a bit of water and brush top of each puff pastry. Bake for 20 minutes or until golden brown. Lunch: white chicken chili with rice https://www.thecheesecakefactory.com/recipes/white-chicken-chili Smoothie popsicles: into a blender add about a cup milk of choice, 1 banana, 1 cup frozen strawberries, 1/2 cup frozen mango and 1/2 cup frozen pineapple. You can also add honey to make it sweeter. Blend until smooth. Divide into popsicle molds and freeze for at least 6 hours. Dinner: creamy garlic pasta with shrimp and broccoli Cook your pasta al dente and save some pasta water. Steam or boil some broccoli florets for about 3 minutes. Remove from pot and place in cold water for a minute and drain. Season 1 lb of shrimp to your liking. Into a skillet add about 2 tablespoons olive oil and cook the shrimp for about 2 minutes on each side. Remove from skillet and 3 tablespoons butter. Once butter has melted add some minced garlic and sautee for a minute. Add 1.5 cups heavy cream and let simmer on low heat. Add all-purpose seasoning of your choice, or any other seasoning that you like along with about 3/4 cup of grated parmesan. Stir and let simmer for a few more minutes. Add the pasta and broccoli and toss to combine. Add pasta water if needed. You can also add the shrimp back into the skillet but my kids prefer it on top and not get tossed with the pasta. Pasta with sausage and peppers 10 oz pasta of choice, cooked al dente Olive oil 1 lb. sausage cut into 1/4 inch thick pieces About 2 cups sliced bell peppers 1/2 onion, sliced thinly 4 garlic cloves, minced 28 oz crushed tomatoes Seasoning: All Purpose and Red Jalapeño Garlic 1/2 tsp dried oregano 1 tsp smoked paprika Salt and pepper to taste Grated Parmesan for garnish Chopped parsley for garnish Directions: Heat the olive oil in a skillet and sear the sausage pieces for a few minutes on each side. Transfer to a plate. Add the bell peppers and onion, cook for 5 minutes. Add the minced garlic and cook for another minute. Add the crushed tomatoes and seasoning. Feel free to use seasoning to your liking. Stir and add a little water if necessary. Simmer for a few minutes then add the cooked pasta and sausage into the skillet. Add grated Parmesan and chopped parsley, chili flakes would be great also.
