CREAMY HIGH PROTEIN SALMON PASTA 12 oz protein pasta, uncooked (I used spaghetti) 1 lb salmon (skin off) 1 tbsp olive oil 1 tbsp Old Bay seasoning 1 tbsp ghee 2 cloves garlic, minced 1/2 onion, chopped 10 oz cherry tomatoes, halved 4 cups spinach 1 cup heavy cream juice of 1 lemon 1/2 cup freshly grated parmesan cheese 3 tbsp fresh parsley salt + pepper to taste For pasta- In a pot, add water and bring to a boil. Add salt to water and cook pasta until al dente. Drain and set aside. Cube salmon into bite size pieces. Into a bowl, add salmon, olive oil, and Old Bay seasoning. Mix well and set aside. In a medium saute pan, turn on medium heat. Add 1 tbsp ghee. Add your cubed salmon and cook for about 3-4 minutes on each side. Once cooked, remove salmon from the pan and put on a plate. In the same pan, add your garlic + onion. Cook for 2 minutes, stirring and add in your halved tomatoes as well as spinach. Stir to cook for about 2-3 minutes. Turn heat to low, add your cream and parmesan cheese and stir. Add lemon juice, taste and adjust with salt and pepper. Add in your cooked pasta, salmon- mix well with tongs! and top with parsley and more parmesan cheese for serving. ENJOY!
