Excuse the hungover voice😵💫 This def isnt an authentic curry but it hit the spot in our house today🙌🏻 What you need: 12 boneless chicken thighs 1 Onion 3 Garlic Minced 1 Tbsp Ginger Minced 1 Tsp Paprika 1 Tsp Garam Masala 1 Tap Coriander 1 Tsp Cumin 2 Tbsp Curry Powder 250ml Chicken Stock 400g Can Coconut Milk 1 Mug Peas Defrosted 1 Tbsp Tomato Purée 1-2 Tbsp Cornflour mixed with double water(I used 2 with 4tbsp water) What to do: Heat oil in a pan, add chopped chicken thighs, 1 tbsp curry powder, season and cook for 3-5 mins until starting to colour. Mix in onions, cook for 2-3 mins Add in garlic & ginger, mix through for 1-2 mins Pour in chicken stock, coconut milk, peas & simmer for 10-15 mins. Add in cornflour and simmer for a couple of mins.
