Add onion & chilli, cook for 3-5 mins over low heat, mix through ginger, garlic & lime zest and heat for 1-2 mins. 3. Pour in stock and coconut milk & cream(keep some back to top chicken at the end) 4. Mix in soy sauce, add chicken back in, cover and cook for 10-15 mins over low heat until chicken is cooked through & sauce is thickened. 5. Add butter, melt & add onion, cook for 3-5 mins until softened, mix in garlic & ginger for 1 min. Pour in tomatoes, season & simmer for 10 mins, mix in sugar and blend for a smooth sauce. Make your butter and make space between the skin and the breast of the chicken, wear gloves if you don’t like the feel of raw chicken. Fill the space with the paprika butter and massage to cover all the breast under the skin. Add oil to remaining butter and brush all over the outside of the chicken. I add a little chicken stock to the base of the pan. Cover with foil and cook for 50 mins @ 190C, remove foil and cook for 30 - 40 mins @ 200C until golden. I baste with the cooking juices during this time. You can make your own gravy with the juices and cornflour but I make some bisto gravy and strain the chicken juices in. Mix in onions, cook for 2-3 mins Add in garlic & ginger, mix through for 1-2 mins Pour in chicken stock, coconut milk, peas & simmer for 10-15 mins. Add in cornflour and simmer for a couple of mins.
