Episode 5 | Date Night Dishes Pizza 🍕 What’s not to love! Makes 4 pizzas. The dough is over-night proofed, 60% hydration: 800g Tipo 00 flour 480ml lukewarm water 10g instant yeast 20g fine sea salt 1. Mix together the water and yeast. Set aside and leave yeast to bloom (go bubbly), roughly 10 minutes. 2. Mix the flour and salt in a bowl, then pour in the yeast mixture. Knead for 10-12 minutes until smooth and elastic. Use window pane test to help know when it’s done. 3. Place into an oiled bowl and leave to rest in the fridge and double in size, for 24-48 hours (the longer = more flavour). 4. Remove dough from fridge, portion into 4 balls then cover and leave to rest for 4-6 hours until doubled in size (will take a while as they will be so cold). Take a portion of the dough, using your hands press the ball into a disc, starting in the middle and working outwards. 5. Once shaped into a pizza base, top with any toppings you like. Here I used a basic tomato sauce, mozzarella and chorizo. Cook in a preheated pizza oven OR preheat a baking sheet in your oven to the highest heat possible. If in a regular oven, cook for 6-8 minutes until crisp on the bottom and the crust has gone golden brown. 6. Sprinkle with some salt and pepper, a farting of Parmesan and serve.
