Mix the chicken pieces with the rest of the marinade ingredients. Leave to marinate overnight, or at least a few hours. 2. Place onto skewers, then grill on medium-high heat until slightly charred and cooked through. Baste with ghee throughout the grilling process. 3. In a pan, sweat the onions in the ghee with the green chilli, garlic and ginger for 5-10 minutes over medium-high heat. Turn heat down to medium, add the spices then cook for 5 more minutes. 4. Add the pasta, water, cream, kasoori methi (fenugreek) and salt to the pan, and cook for 5 more minutes over a medium-high heat. Tip into a blender, blitz until smooth, then pour back into the pan. Stir in the grilled chicken pieces and serve. 5. To make the naan, mix the flour, salt, sugar and bicarbonate soda in a large bowl. Add the yoghurt and oil and mix. Gradually add the water whilst mixing, until all used up. Knead for a few minutes until smooth, then leave to rest for 15 minutes. Divide into 8, roll into thin discs, then cook on a high heat pan for a few minutes until bubbles appear not top. Flip and repeat, then set aside into a damp towel. The dough is over-night proofed, 60% hydration: 800g Tipo 00 flour 480ml lukewarm water 10g instant yeast 20g fine sea salt 1. Mix together the water and yeast. Set aside and leave yeast to bloom (go bubbly), roughly 10 minutes. 2. Mix the flour and salt in a bowl, then pour in the yeast mixture. Knead for 10-12 minutes until smooth and elastic. Use window pane test to help know when it’s done. 3. Place into an oiled bowl and leave to rest in the fridge and double in size, for 24-48 hours (the longer = more flavour). 4. Remove dough from fridge, portion into 4 balls then cover and leave to rest for 4-6 hours until doubled in size (will take a while as they will be so cold). Take a portion of the dough, using your hands press the ball into a disc, starting in the middle and working outwards. 5. Once shaped into a pizza base, top with any toppings you like. Here I used a basic tomato sauce, mozzarella and chorizo. Cook in a preheated pizza oven OR preheat a baking sheet in your oven to the highest heat possible. If in a regular oven, cook for 6-8 minutes until crisp on the bottom and the crust has gone golden brown. 6. Sprinkle with some salt and pepper, a farting of Parmesan and serve. Taste and adjust to taste) 1.1kg potatoes (fluffy variety best - I used king Edward) 150g Tipo 00 flour (plain flour will also work just fine) 1 large egg Large pinch of fine sea salt 160ml double (heavy) cream 1. Prick the potatoes with holes, then place into a 200 C / 380 F oven to bake for 1 hour. Remove from oven, scoop out potato and pass through a ricer, food mill, or sieve. If you have one, use a fork to mash it up, but do not to overdo it. 2. Tip 1/4 of the flour over the potato and mix together. Add another 1/4 then mix, then crack an egg into the centre. Bring this together, adding more flour when needed, until smooth and cohesive. Don’t over mix it here. You might not need to use all of the flour. 3. Using your fingertips, roll the dough out into a thin log, then cut into 1inch pieces. 4. Boil the gnocchi in salted water for a few minutes until it floats to the surface. Strain and set aside into an ice bath whilst preparing the sauce. 5. For the pesto, blitz all of the ingredients together until smooth. Tip this into a pan with the cream, some more parmesan and black pepper. Once hot, stir through the gnocchi and serve with extra toasted pine nuts and cheese on top. Preheat an oven to 110 degrees C / 230 degrees F. 2. Blend the salt and rosemary together, place the duck legs into baking tray and cover with the salt. Cover then leave in the fridge overnight to cure. 3. When ready, wash off the salt from the duck. Place the legs into a dish, add the rosemary and garlic, then submerge with the duck fat. Cover dish with a lid or aluminium foil. Place into the oven to cook for 4 hours until tender. Once cooked, remove the duck from the oil then sear in a frying pan to brown. 4. Meanwhile, fry the potatoes in 2 tbsp duck fat for 10 minutes until golden brown. Add in the garlic and parsley, and cook for a few more minutes. Remove from the heat, grate over a good amount of Parmesan then top with the duck legs and more parsley.
