01:01Reuben Sandwich 🥪 I ate one of the best Reuben sandwiches I’ve ever tasted in NYC recently, so HAD to come back and try this for myself at home. Turned out SO well 🔥 Brine: 200g salt (2.5%) 20g prague powder (0.25%) 200g brown sugar (2.5%) 2 tbsp fennel seeds 0.5 tbsp peppercorns 0.5 tbsp juniper berries 5 cloves 2 tbsp coriander seeds 2 tbsp mustard seeds 1 tsp ground ginger 4 bay leaves 2 sprigs of thyme 5L water (half boiling hot, half ice) 3kg wagyu beef brisket Rub: 3 tbsp black peppercorns 3 tbsp sugar 2 tbsp smoked paprika 2 tbsp garlic powder 3 tbsp coriander seeds Equipment / specialist ingredients needed: Large container Prague power (to keep the cure safe) - can be ordered online Smoker Thermometer (one that you can leave in the meat whilst it is cooking) 1. Add all the brine ingredients into a large container, pour in the boiling water, stir to dissolve then add in the ice to cool. Add the brisket into the brine, weight down with a plate, cover and leave to cure for a few days. *This is an equilibrium brine, so you can leave the meat curing in the brine for longer, as the meat won’t be able to get saltier than the 2.75% target. Turn the meat every couple of days to ensure even cure. 2. Once ready, rinse off with water then place into another container full of plain water and leave in the fridge overnight to desalinate. 3. To make the rub, blend all ingredients together until it forms a powder. 4. Pat desalinated brisket dry then evenly cover in the the rub. 5. Smoke the brisket at 110 C for 6-7 hours. Halfway through, when it reaches internal temperature of 75 C, wrap tightly in foil then place back into smoker until it reaches 95 C. Remove from the heat then leave to rest for at least an hour, or cool overnight, before slicing. 6. Serve as part of a delicious Reuben sandwich with toasted rye bread, Russian dressing, pickles, Swiss cheese and sauerkraut. The added miso and Boursin are a game changer 🔥 Serves 10 or more (as a side) 2 x large cauliflower Olive oil Salt & pepper 100g butter 200g flour 2 litre milk 2 garlic cloves 120g cheddar cheese (plus extra for topping) 80g gruyere 1/2 Boursin 2 tsp miso paste 20 grinds black pepper 2 tsp mustard Grating of nutmeg Sprinkling of parsley Season with salt to taste after adding cheese 1. Rinse and cut the cauliflower up into medium size florets and cut the ends of the leaves. 2. Add the florets and leaves into roasting trays, add some oil, salt and pepper, then roast in an oven at 200 C / 390 F for 20-25 minutes until starting to brown. 3. Meanwhile, prepare the cheese sauce. Melt the butter in a large pan then add the garlic. Cook over a medium heat until the butter and garlic have both browned (make sure not to burn the garlic otherwise it will go bitter). Add the flour, then mix together and cook for a few minutes to make the roux. 4. Gradually add in the cold milk, continually whisking, until all combined. Bring to a gentle bubble and cook for a few more minutes. 5. Remove the sauce from the heat, add in the remaining ingredients then stir though until melted. 6. Preheat an oven to 180 C / 355 F. 7. Add the roasted cauliflower and leaves into a wide dish, then cover with the cheese sauce. Mix until the sauce is distributed evenly, then top with more cheddar. 8. Place into the preheated oven and cook for 30 minutes until starting browned on top. If needed, place under the grill to quickly speed this up if more browning is needed after 30 minutes. 01:00Episode 2 | Christmas Sides 🎄 Stuffing & cranberry sauce 🔥 Serves 12 or more 1 tbsp butter 1 tbsp olive oil 2 large onions, diced 1 tbsp sage leaves, chopped 2 large sprigs of thyme, leaves chopped 8 garlic cloves, minced 540g chestnuts, chopped 2kg sausage meat 190g bread, roughly chopped 2 eggs Grating of nutmeg Small pinch of ground cinnamon Small pinch of ground clove Zest and juice of 1 orange Salt and pepper to taste 1. Saute the onions in the butter and oil for 10 minutes until starting to brown. Add in the garlic, chestnuts and herbs, and cook for another 10 minutes over a medium heat. 2. Add the sausage meat into a bowl with the remaining ingredients, then add the cooked chestnut mixutre. Mix thoroughly until all combined and ‘paste like’. 3. You can then either cook the stuffing inside of your chicken / turkey, or alternatively place it into a pan / roasting tray and roast in the oven at 200 degrees C for 30-40 minutes until cooked through and golden brown on top. If stuffing inside a turkey, secure the legs together to prevent the stuffing from spilling out of the cavity. I love to split the stuffing in half and cook it both ways. Enjoy! 170g sugar 600g cranberries Large pinch of salt 400ml water Zest of 1 orange Juice of 1 orange Splash of port (optional) Sprig of rosemary 1 stick of cinnamon Grating of nutmeg 1. Add all the ingredients into a saucepan, bring to boil then cover and cook over a medium heat for 7-8 minutes. Remove the rosemary then take lid off and cook another 15-20 minutes on medium low heat. Crush some of the cranberries with the back of a spoon to thicken the sauce. 01:00Episode 1 | Christmas Sides 🎄 Roast Potatoes 🥔 In this new mini series I’ll be showing you some of THE best and tastiest classic Christmas side dishes to help you make the best tasting Christmas meal you’ll ever have had. First up, the mighty roast potatoes 😏🔥 Serves 6-8 2kg king Edward potatoes, peeled and cut into chunks (these my favourite variety as they are incredibly fluffy, therefore crisp up the best) A few garlic cloves, peeled and crushed in the palm of your hand 500g goose / duck / beef fat Few sprigs of rosemary, stalks removed Zest of 1 lemon Generous sprinkling of sea salt 1. Add the potatoes into a pot with a pinch of salt and the garlic cloves (optionally add in some rosemary sprigs here too), cover with cold water and bring to a boil. Cook for roughly 10 minutes until fork tender, but not falling apart. 2. Preheat an oven to 200 C / 390 F fan. 3. Strain the boiled potatoes then leave to steam dry in the colander for a few minutes. Add back into the dry pot, cover with a lid and shake to lightly ‘fluff’ them up - this is what gets you the extra crispy edges. 4. Add the goose fat into two baking trays, place into the oven and preheat the oil for 15 minutes. 5. Remove the tray from the oven and then carefully add in the potatoes. Coat each potato in the goose fat then place them back into the oven. 6. Cook the potatoes for 60-75 minutes, turning every 20 minutes or so to coat them evenly in the oil. 7. Whilst cooking, prepare the rosemary salt bg blending together, or finely chopping, the rosemary, lemon zest and salt. 8. Once the potatoes have cooked and are a golden brown colour all over, remove them from the oven and lift out of the tray with a slotted spoon. Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary. This is THE perfect potato for any roast or Christmas dinner, or simply to go alongside a bowl of rich gravy.
