Jerk Chicken (serves 4) 8 small chicken thighs, bone in and skin on Marinade: 30g jerk paste (I like Dunn River brand) 1 heaped tsp. all-purpose seasoning 1 tsp. allspice 1 tbsp. fresh thyme leaves 1 tbsp. fresh ginger grated 2 tbsp. soy sauce 1 tbsp. red wine vinegar 4 spring onions roughly chopped Method: 1: Blitz up the jerk marinade ingredients until smooth then set aside. Slash each thigh three times, making sure you go right down to the bone, place the chicken into a bowl then pour over the marinade, mix well to make sure the chicken is well coated with the sauce. If time allows leave overnight to allow the flavours to develop. Place onto a baking tray skin side up and cook in a Pre-heated oven set to 190c / gas mark 5 for 35-40 minutes or until the chicken is cooked through.
