High protein Chicken Alfredo Pasta Bake! My husband gave this a 20/10 and my toddler asked for it for school lunch the next day, so I think it's safe to say this is a winner for us and going on the rotation! Pasta Bake: 1 lb chicken breast cut into 1 inch cubes 340 grams broccoli florets 224 grams uncooked @barilla protein+ penne 1 tbsp olive oil 1/2 cup 2% milk 1 cup low fat cottage cheese(i use TJs brand) 1 cup low fat mozzarella cheese(i use TJs brand) 1/2 tsp salt and black pepper 1 tsp red pepper flakes 1 tsp garlic powder 2 tbsp parmesan cheese 1. Boil and cook your pasta until cooked through on the box 2. cook your broccoli by either throwing it into the pasta water for a quick blanch or you can microwave it for about 4 minutes covered ( i microwaved!) 3. Drain and then in that same pot add the olive oil and chicken with seasonings and cook for 2 minutes per side or until its at an internal temp of 160 4. blend the cottage cheese, salt and pepper and milk until creamy and then add to the cooked chicken 5. In a baking dish add your pasta, broccoli and chicken with sauce and mix together. 6. Sprinkle on 1/2 cup of mozzarella cheese and mix 7.
