Steamed Prawn Dumplings RECIPE (makes 10 dumplings): 150g prawns, finely chopped 3 tbsp chives, finely chopped 1/2 garlic clove, minced Small knob of ginger, minced 1 tsp sesame oil 1 tsp soy sauce 1 tsp cornflour Pinch of salt & pepper Rice paper sheets Dipping sauce: 2 tbsp soy sauce 1 tsp rice vinegar or black vinegar 1 tsp chilli oil 1. Stir together the prawns, chives, garlic, ginger, sesame oil, soy sauce, cornflour, salt and black pepper. 2. Cut each rice paper sheet into quarters. Stack 3 quarter pieces on top of each other at an angle and dip into room temperature water for a few seconds until the rice paper begins to soften. 3. Add a spoonful of the prawn mixture (~1 -2 tsp) to the centre and lift up the sides of the rice paper, pinching it at the top to seal in the filling. 4. Steam the dumplings for ~10 minutes or until the wrappers are translucent and the filling is cooked through. 5. Serve with the dipping sauce and enjoy! #dumplings #dimsum #ricepaper
