I whipped up a delicious roasted red pepper pasta using some of my favourites. For dessert, I ordered a Happy Endings ice cream sandwich which was the perfect sweet treat. Roast the red peppers with a drizzle of olive oil at 200C for 20 mins or until nicely charred. Set aside to cool slightly before peeling. 2. Add a drizzle of olive oil and knob of butter to a saucepan on a medium heat. 3. Add the shallots, garlic, and a pinch of salt & pepper to the saucepan and gently fry for 3-4 minutes until softened but not coloured. 4. Add the tomato paste and chilli flakes to the pan and fry for 4-5 minutes until the paste becomes darker and slightly caramelised. 5. Whilst the tomato paste is frying, cook the pasta. Cook the pasta for 1-2 minutes less than the packet says in salted water and reserve a cup of pasta water. 6. Add the roasted red peppers to the pan and start to break them down. 7. Add 1/4 cup pasta water and the cream to the pan. Season with black pepper. Stir until combined and allow to simmer for 1-2 minutes. 8. Transfer the mixture to a blender and add blitz until you have a smooth sauce. Add more pasta water if needed. 9. Transfer the sauce back to the pan and add the al dente pasta. Stir until the pasta is coated with the sauce. Add a handful of freshly grated Comte. 10. Taste for seasoning and adjust accordingly. Add more pasta water if needed to thin the sauce. 11. Serve the pasta in bowls and top with the pesto and extra grated Comte - enjoy!
