Ok, what are you having for dinner tonight, because the festive recipes are everywhere so I’m going to show you how I make my Cheats’ Kıymalı Tantuni (Beef Mince Wraps). In terms of the main ingredients, it’s just beef mince, garlic, oil and spices. Traditionally, the filling is made with finely diced beef (veal) or lamb, but this is a great quick and easy version using mince (you can use beef, lamb, or even chicken, turkey and meat-free mince). We have them when we go on holiday to visit family in Kıbrıs too. Tantuni originates from the City of Mersin, a southern Turkish port on The Mediterranean coast, so it’s no surprise that it’s made its way over to Kıbrıs via its easiest access point. INGREDIENTS (enough to fill 8 wraps) 3 tbsp light olive oil / rice bran / sunflower oil 750g beef mince 4 finely grated garlic cloves 1 tsp ground cumin 1 tsp paprika 1 heaped tbsp tatlı biber salçası (sweet (mild) red pepper paste) / tomato puree 1 tsp fine sea salt 1/2 tsp coarse black pepper 100ml water Pul biber, summak, paprika, fresh parsley, sliced onions and diced or sliced fresh tomatoes, chilli peppers and lemon juice to serve METHOD Add the oil to a large frying pan and place on the hob on a high heat. Add the mince to the pan, breaking it down into the hot oil without stirring it, then once the underside crisps and browns, stir well, add the garlic, spices, seasoning and paste, stir well, then let the mince brown and crisp all over for another 5-6 minutes. Add 100ml water to the pan and cook on a high heat until the liquid reduces down completely.
