BUFFALO CHICKEN SALAD 😋🧡 This healthy buffalo chicken salad is the perfect high protein, low carb lunch to meal prep for the week! Healthy crispy chicken tenders & fries!🍗🍟 I think that one of the biggest keys to healthy eating is to make healthier versions of the foods that you LOVE so that you can eat them whenever you want! These air fried crispy chicken tenders and sweet potato fries really hit the spot - they are sooo delicious and easy to make! 🙌 I made this for 2 people but you can adjust the amount of sweet potatoes and chicken you make! 🍟 Sweet potato fries: - 4 sweet potatoes - 1 tbsp olive oil - 1/2 tsp each: paprika, garlic powder, salt, baking powder - 1/4 tsp pepper Preheat oven to 425. Slice the potaotes into long fry shapes. Add them to a big bowl and toss with olive oil and all the spices. Spread into a lined baking sheet and bake for 25-30 mins, tossing a few times while cooking. 🍗 Chicken tenders: - 5 chicken tenders (or slice chicken breast into long strips) - Salt & pepper - 1/2 cup breadcrumbs or panko - 1/2 tsp garlic powder - 1/2 tsp paprika - Olive oil spray (OR 1 beaten egg - I ran out!) Season both sides of the chicken with salt and pepper. Add the breadcrumbs to a shallow bowl with garlic powder, paprika, and a little salt and pepper and mix to combine. Lightly spray both sides of the chicken with olive oil OR dip in beaten egg, then coat both sides in breadcrumbs. Add to air fryer basket in a single layer and spray tops with oil. Air fry at 400F for 12 mins flipping halfway. Chopped Kale Caesar Salad 🥬🥗✨ This is my favorite lunch that I have been LOVING lately! It’s so easy to whip up, is packed with protein and healthy fats and is so delicious. The star of the show is the ‘caesar’ dressing. It’s not a traditional caesar dressing but tastes even better in my opinion! Another day of private chefin. 👩🏻🍳 On this day I restocked the fridge with some cooked chicken thighs and focused on dinner since my clients had a guest over. As a starter I prepared a simple spinach salad with corn, cilantro, radishes, sprouts, avocado & a lime honey vinaigrette.
