Similar to a prawn toast but instead of bread it’s fried dough sticks (youtiao) filled with cuttlefish. Defo try it if you’re visiting. - CHILLI CRAB BAOS. As we weren’t in the mood to tackle a whole chilli crab, we opted for these little buns and they were really nice! Lightly crispy on the outside and fluffy on the inside. Probably could’ve done with a little more filling but flavour-wise it was delicious. - CEREAL KILLER PRAWNS. Never had prawns coated in cereal before and I gotta say it works! The only thing I will say that it’s a bit on the drier side so best paired with a soupy or saucy dish. DIDN’T LOVE AS MUCH: Cuttlefish skewers (not mentioned in video as I ran out of time) but thought it was quite meh. Defo get the youtiao version instead! OTHER NOTES: We only tried on of their kuehs (traditional Singaporean dessert as we were SO FULL). I love all things chewy and pandan so you love mochi, definitely order a kueh to finish your meal. There were loads of drinks on the menu too. I got the milo dinosaur but would’ve also gotten the coconut shake as that also sounded really nice. 01:05I made butter chicken for the first time!!! // Back from India, it felt right to finally start cooking Indian cuisine - something that I’ve always felt intimidated by, so I thought I’d share a little around why I’ve felt this way. I guess this is probably also how people feel when they first take on Chinese or East Asian cuisine? So if that’s you, I hope you find inspiration in trying something new and embracing all the mistakes you make along the way! — The following recipe is adapted from a number of butter chicken recipes I read online with everything I had at home without buying new ingredients. Ingredients: For marinating: - 750g chicken thigh fillets, cut into large chunks - 1 tbsp grated ginger - 1 tbsp grated garlic - 3 tbsps natural yogurt - 1 tbsp lemon juice - 1 tbsp garam masala - 1 tsp chilli powder - 1 tsp ground turmeric - 1 tsp ground cumin - 1/2 tsp salt For the sauce - 1 heaped tbsp ghee or butter - 1 large onion, finely diced - 2 cloves garlic, finely minced - 1 tsp cumin seeds - 1 tsp garam masala - 1 tsp chilli powder - 5 tbsp tomato paste - 300ml double cream - 1/2 tbsp lemon juice Instructions: 1. Marinate the diced chicken in all the ingredients for at least 1 hour - I did this overnight. 2. Fry off the chicken for 7-8 minutes, then add the spices, onion, garlic and cook for a few more minutes. 3. Add in the tomato paste and cream and mix through. Let this simmer on a low heat for 15-20 mins. More salt to taste if needed. 4. Mix through the lemon juice towards the end when you’re ready to serve, and garnish with a little more cream and fresh coriander. 5. Serve with rice, naan or roti. P.s.
