00:20Today’s diary entry is about my love for buying a whole chicken, I tend to do it most weekends and enjoy contemplating how I might cook it. Rarely do I shop with a plan; usually, buying what looks nice and figuring out the rest later. Maybe I’ll roast it whole over vegetables, other times I may boil it, but there is one thing I never skip to ensure a lovely tasting chicken; And that is to dry brine. Put simply, I remove the chicken from the packaging and generously season it all over with salt, leaving the bird uncovered for 24 hours in my fridge. As the salt creeps into the skin and into the meat, it results in a better-tasting juicier chicken no matter what you decide to do with it later. Another benefit of this process is the skin becomes dry. Moisture is the antidote to making anything crispy, and obviously, crispy chicken skin is something we all strive for. In today’s recipe, I’ve spatchcocked my chicken, a pretty simple process that I won’t explain because I’ve talked enough already, but it can be learned via YouTube. The benefit is that it will lay flat on a tray and cook evenly in less time. Ingredients for the recipe are listed below. Any questions, drop me a message. For the roast chicken glaze: * Maple syrup * Chilli powder * Salt * ½ tsp chicken powder Winter salad: * Hispi cabbage * Celery * Spring onion * Green chilli * Shallots * Coriander * Roasted Cashews Sesame soy dressing: * Vegetable oil * Sesame oil * Garlic * Soy sauce * Rice vinegar * Maple syrup * Salt Whisk the dressing to emulsify. #saladology
