I smashed the chicken breasts down to make them consistent thickness for frying. To the breadcrumbs I added some garlic granules, oregano, salt & pepper A little flour before a dip in the egg mix then into the seasoned crumb!! I preheated the oil to 190°c in the skillet on the grill. As soon as the chicken was breaded it was into the oil for a shallow fry. Once golden I moved it across to the roasting rack / shield to finish whilst I got the next one in. I made a quick garlic butter with 2 cloves smashed & chopped then added some flat leaf parsley. After roasting the rolls I added the cheese slices, followed by the chicken, topped with the Ballymaloe sauce and some grated cheese giving the roll tops a brush with the garlic butter…… I mean can you ever have too much flavour??? Placing it all back onto the roasting rack / shield for 5 mins until the cheese was nicely melted. Picnics don’t need to be boring……. This star of the show in this recipe is the Black Bean Rayu which gives unique savoury & spicy kick to the eggs transforming them into something special….. For this dish we used (feeds 4) 6 eggs 2 tbsp of @dromonamakesit butter 2 tbsp of the Rayu 6 slices of bacon. Grill & chop the bacon Melt the butter in a pan Add the beaten eggs to the pan and continue to move so they form silky ribbons of egg. When the egg is 2/3 cooked add the Rayu to the pan then combine with the eggs until coated, then return the chopped bacon to the eggs mix & serve on hot toast. 00:58Mushroom Toast…. New year, new me… well not quite but I do like a challenge and when Hexclad UK challenged me to make something id never made before…. I took on the challenge to eat less meat. We are opting to go meat free at least one day per week to reduce the amount of meat we consume in our meals and this is one of our meat free recipe options. We love our brunches and have enjoyed similar dishes when in restaurants but never made this one at home. This Mushroom toast is absolutely packed with flavour and one you really should try. Our @HexClad pans are perfect for this sort of dish, non stick, safe with any utensils and of course easy to clean being dishwasher safe! [AD] If you wish to try it for yourself you will need: Ingredients, serves 2 300g of sliced mushrooms of choice (we opted for chestnut) Sourdough for toasting Mixed leaves (rocket works well) 2 shallots finely diced 2 cloves of garlic finely chopped 150ml of white wine 2tbsp of Crème fraîche 2 sprigs of fresh thyme 1/4 tsp freshly ground black pepper 1/4 tsp of salt Grated Parmesan Small pinch of pink peppercorns (optional but give a fantastic aroma and twist to the finished dish). Small amount of olive oil & 1 Tbsp of butter to sauté Method Set up your BBQ or hob to grill on a medium heat Add the oil & butter tot he pan when melted add the garlic and shallot and soften for around 1-2mins Add the sliced mushrooms Add a spring of thyme When the mushroom have got some colour and started to soften mix in the salt & pepper. Add there wine and return to the heat and reduce Once cooked remove from the heat and add the Crème fraîche before returning to the heat and combining. Top your slices of toasted sourdough with some mixed leaves, then the hot mushrooms before sprinkling with pink peppercorns & grated parmesan.
