Let it rest for 5 minutes, then knead briefly and let it rise for about 1-2 hours or place in the fridge to use the next day. ❷ Preheat oven to 250°C. ❸ Crumble tofu, then roughly blend the remaining ingredients for the filling into a paste and mix with the tofu. ❹ Divide the dough into 6 pieces, shape each piece into ball, then set aside to let the dough relax. Cover to prevent from drying out. ❺ Thinly roll out the dough, place on a baking tray, then spread with the filling and bake in the preheated oven for 6-12 minutes until well browned and crispy. ❻ Repeat with each dough ball. It’s firm, it’s creamy, it tastes mildly cheesy and yes, it melts! 😌 Perfect for caprese or on top of a pizza! ⠀ RECIPE (8 small balls) - 1 cup (150 g) cashews - 1 cup (250 g) unsweetened soy yogurt - 1-2 tsp salt - 2 tbsp nutritional yeast (optional) - 3 tbsp tapioca starch - 1.5 tbsp agar agar powder - ½ cup (120 ml) water optional additions: - 1 tsp of miso paste - other herbs & spices ⠀ ❶ Soak cashews overnight or boil for about 10 minutes. ❷ Add cashews, vegan yogurt, salt, tapioca starch and nutritional yeast to a blender and blend until creamy. ❸ In a pot combine the water and agar agar, stirring until the agar agar is completely dissolved. Bring it to a boil and simmer for 2 minutes. ❹ Add the cashew cream to the saucepan and stir to combine. Cook the mixture for about 5-6 minutes, stirring constantly, until it gets very thick and stretchy. ❺ Prepare a large bowl of ice-cold water. Scoop out mozzarella balls with 2 wet spoons. 00:23Crispy ricepaper dumplings 🔥🌱 ⠀ A fun and easy way to make dumplings at home. ⠀ RECIPE (8 dumplings) - 8-16 sheets ricepaper - oil to fry - 200 g mushrooms of choice - 1 tbsp soy sauce - 200 g smoked tofu (or regular firm tofu) - a few leaves of cabbage - 1-2 carrots - 4 scallions (or Chinese chives) - 2 garlic cloves - small piece of ginger - 1 tbsp toasted sesame oil - salt & pepper ⠀ Dipping sauce: - 1-2 tbsp soy sauce - 2 tsp rice vinegar - 1 tsp maple syrup - 1 tsp sesame oil - 1 tsp gochujang - splash of water ⠀ ❶ Sauté mushrooms until most of the water has evaporated and they have got some color. Deglaze with soy sauce and set aside. ❷ Optionally sauté veggies and tofu for a couple of minutes. Alternatively you can chop everything very finely and leave it raw. ❸ Combine all ingredients for the filling in a bowl and season to taste. ❹ Dip ricepaper into water for 5 seconds. Place 2-3 tbsp filling in the middle and close the sides. If frying, wrap in another sheet of ricepaper to prevent from falling apart. ❺ Bake at 200°C for 15-20 minutes, turning on the broiler for the last 2-3 minutes or fry in a little bit of oil until crispy. Try this recipe 😉 ⠀ RECIPE (6-8 portions) - 1 medium-small head cabbage - salt - oil to fry ⠀ - 80 g vegan butter (or olive oil) - 4 tbsp tomato paste - 4 garlic cloves - 1 tsp ground coriander - 1/2 tsp oregano - 1 tsp red pepper flakes - 1.5 cups water ⠀ To serve: - rice - vegan labneh - fresh parsley or cilantro ⠀ ❶ Preheat oven to 160°C. ❷ Cut the cabbage into wedges. ❸ Fry wedges in a hot pan with a generous pinch of salt and oil until caramelized from both sides. If necessary work in batches. ❹ Mix all ingredients for the tomato butter, then spread onto the cabbage. Add water to the pan or baking dish, then bake without a lid for 45-60 minutes until most of the water has evaporated and the cabbage is soft and caramelized. ❺ Serve on vegan labneh or some rice with fresh herbs such as parsley or cilantro.
