You'll thank me later 🫶 Ingredients: •1tbs of olive oil, from your sun-dried tomato jar. •500g chicken tenderloins, diced •3 garlic cloves, minced •80g sun-dried tomatoes, in oil, drained •1tsp italian seasoning •1.5 tsp paprika •salt & pepper •1 cup orzo/ risoni •2 & 1/2 cups chicken stock •1/2 cup light cream, (i used light philadelphia cooking cream) •1 cup fresh spinach •1/4-1/2 cup parmesan cheese, freshly grated Method: Season the diced chicken in 1 tsp paprika and a sprinkle of salt. Add oil to a large pan over medium-high heat. Once the pan is hot, add the diced chicken. Cook for 2-3 minutes. Add in the sun-dried tomatoes, garlic, Italian seasoning, the other 1/2 tsp of paprika, salt & black pepper. Cook for 3-4 minutes more, then add the risoni and stock and stir well. Reduce heat to medium. Cover the skillet and cook for 10-15 minutes, stirring throughout, ensure nothing sticks to the bottom of the pan, add an additional 1/4 of stock as needed. Once the orzo is cooked through, add the cream and spinach and stir for another minute until the spinach is wilted, then add in the parmesan cheese and stir once more. Remove from heat and enjoy! Crush Weet-Bix™ in a bowl, add your sweetener and milk. Mix together then smooth over the surface. 2. Crush down your fresh raspberries and layer them onto the Weet-Bix™ base. 3. In a separate bowl, mix together 125g of the yoghurt with your protein powder until smooth. Spread over the the raspberry layer. 4. Melt white choc in a microwave safe bowl for 20-30 sec intervals so it doesn’t burn. Mix in the remaining 25g of yoghurt until smooth. 5. One of my fav baked goods ever 😍 I had a little helper today... we'll sort of 😂 Ingredients: •270g plain flour •1/4 cup of caster sugar or granulated sweetener •1.5tsp baking powder •pinch of salt •1/4 cup of cubed butter, room temp •80g plain Greek yoghurt •80g of canned coconut milk/ or whipping cream (I used ayam light coconut milk) •2tbs Milk of choice Add ins: •150g frozen blueberries •75g of White Choc chips Method: Place the flour, sugar, baking powder, and salt into a bowl and whisk to combine. Add cubed butter to the bowl with the flour mixture. Rub the butter into the flour with your fingertips until the entire mixture is coarse and crumbly. Add the blueberries and white chocolate. Gently stir together until the berries and chocolate are evenly distributed. Freeze the flour mix for 30 minutes. Preheat the oven to 180•C. Whisk the yoghurt, canned coconut milk and milk together. Make a well in the middle of the frozen flour mixture and pour it in. Gently mix the dough together with a fork until most of the dry bits of flour have been absorbed. Dust the bench with flour and turn the dough out. Use your hands to gently shape the dough into a disc approximately 22 cm in diameter. Slice the dough into wedges (8-9) Optionally brush the tops with a little coconut milk and sprinkle over some granulated sweetener. Bake for 22-25 mins or until lightly golden. 00:12Pasta is my love language 🥰 Ingredients: 1/2-1 tbs olive oil 400g cherry tomatoes 2 cloves garlic, minced 4 tbs tomato paste (60g) 3/4 cup cooking cream (180g) 1/2 tsp each onion powder & paprika Salt & pepper 25- 50g parmesan, grated 375g Spaghetti or pappardelle Basil leaves, to taste Method: Cook pasta as directed by the packet. Drain (reserving 1⁄2 cup of pasta water) and set aside. Add oil to a pan over low-medium heat. Add the tomatoes and 1-2 tbs of water if needed (this will help to soften the tomatoes). Add the garlic and cook for 6-8 minutes or until tomatoes have softened, stirring occasionally. Once tender, mash tomatoes with a fork so they release their juices. Add tomato paste to the pan, sauté for 1 minute then add the cream, seasonings, salt and pepper. Mix well. Add cooked pasta, parmesan, basil leaves and a tbs of pasta water as needed.
